what a beautiful day it is today! right now little webb is inside taking a nap and i am outside trying to get some sun on these pasty legs. i've been trying to decided what recipe to post. 65 degree weather makes me desire so many tasty things. like a bellini or tcby or banana pudding!
my mom always used the recipe on the back of the nilla wafers box when she made naner pudding. i've never made it from scratch, but might just try that some day soon. i've trimmed some of the calories off the original recipe and it's still just as sinful. wish i had a bowlful of this pudding right now!
southern banana pudding
3 cups cold skim milk
2 pkg. jell-o vanilla fat free instant pudding
30 nilla wafers
3 medium bananas, sliced
1 tub low fat cool whip, thawed
pour milk into a large bowl and add both pudding mixes. beat with whisk until well blended and then let stand for 5 minutes.
put half the wafers on the botton of dessert dish, top with half of bananas then pudding. repeat layers and then top with cool whip.
refrigerate for 3 hours. (i think it's best when made the night before serving - the nilla wafers are perfect!)
