a couple of weeks ago i made the best potato salad! i didn't have all the ingredients at home for the recipes i kept finding, so i combined a few and voila! a new favorite recipe was born.
i never knew how much i loved this old fashioned side dish!
southern potato salad
2 lbs new potatoes
3/4 cup light mayo (more if you like it real creamy)
2 T. yellow mustard
1 T. vinegar or apple cider vinegar (whatever you have on hand)
4 rounded T. sweet relish (or more!)
2 eggs, hard boiled
1/2 white onion, diced
1 t. celery seed (if you don't have it, I don't think you'll miss it)
kosher salt, pepper and paprika to taste
dash of cajun seasoning if you've got it
Boil potatoes until tender. Cut into fours, leaving skin on. Add remaining ingredients. Stir, then place in fridge until ready to serve.
I promise it will be your new go to side dish for the summer!
