
a couple of weeks ago i was telling you that i have a new favorite cookbook.
deceptively delicious by jessica seinfeld may change my life! ( ... or at least webb's) here's why:
two nights ago i made the tastiest roasted sweet potatoes for webb's dinner.
i mean, they looked like home fries, and were so good.
i was heartbroken when webb ate two of them and wouldn't even consider one more bite.
as most of his vegetables do, they ended up on the floor in a matter of seconds.
so this morning, i made him pancakes and put sweet potato puree in them.
i couldn't believe he ate an entire one, then a second, and before i knew it he had eaten 3 of them!
he's had pancakes before and i've NEVER seen a sight like this!
i didn't do exactly as deceptively delicious tells you to, but she gave me the idea.
she suggests using premade pancake mix.
instead, i whipped up some pancakes from scratch and then added the sweet potato.
to get the sweet potato ready, i boiled sweet potatoes the night i made the sweet potato fries.
then cut them up and placed in my mini food processor with a couple of tablespoons of water.
grind them up and you have your puree. (just freeze any access amounts you have for next time.)
here's how i did it ...
sweet potato pancakes
1 1/4 cup all-purpose flour
1 t. salt
1 T. sugar
2 t. baking powder
2 T. butter
1 t. vanilla
1 egg
9 oz. milk
1/2 cup (or a little more) pureed sweet potato
sift flour, salt, sugar, and baking powder in medium bowl.
melt butter.
whisk together vanilla and egg.
slowly add milk and butter to flour mixture, alternating a splash of milk with a bit of butter.
combine egg and flour mixture and mix by hand until there are no more lumps.
stir in sweet potato puree.
let batter sit for 10 minutes.
cook pancakes.
i've also done this recipe with banana puree when the bananas are really ripe.
that was casey's favorite of the two.
