i've started a new "easy dinner ideas" tab on the right side of my blog.
i'm hoping this will make things a little easier and more organized for planning meals.
you should see my cabinet of cookbooks and printed recipes.
a bit of a disaster!
i know this will help me out and maybe it'll help you too!
i'm not going to post about what i'm cooking everyday, but hopefully a couple of times a week.
cooking dinner is a whole new challenge with 2 little ones!
so i guess i'm finally coming out of the fog!
actually i think the chaos is starting to get to me.
after 5 months it's finally hit me that if i don't time it just right ...
casey and i aren't eating dinner until 9 and webb ends up with applesauce, raw carrots and either hummus and crackers, a hamburger patty, or chicken nuggets at 6.
easy, fresh, and real food is what we try to eat around here.
and as you know, right now we're staying away from soy and dairy.
though i'm going to say that could be coming to an end real soon.
so here's what's on the menu tonight - barbecue chicken
this is a super easy dish with just 3 ingredients.
this is how i'm making it:
turn your crockpot on low.
add 2 chicken breasts
(i use bone in for more flavor)
slice one onion and place on top of chicken.
pour a bottle of barbecue sauce over chicken and onions.
in a perfect world i would make my own sauce like the neely's.
since that world doesn't currently exist and actually never will, i'll be using this tasty, premade sauce from trader joe's.
leave the crock pot on low for about 8 hours or until chicken is tender.
you can eat it right off the bone or shred and a make a bbq sandwich or salad or even put it on a potato.
our csa starts up today. yay!
so i'm just going to wait and see what sides we can match with the chicken.
i don't know about you, but i hardly ever pull out my crock pot.
but when i do i feel like my day is way less stressful come 5 o'clock.
