quick & easy

i'm always looking for a quick recipe that doesn't contain a lot of ingredients, time or brain power.
and since i'm still staying away from dairy and soy, i've been making this pork tenderloin quiet a bit lately.
it's so easy, so good and i know you'll love it!

(you can do like the instructions say below or do like i do and use garlic powder instead of fresh and dried herbs instead of fresh. i just rub all the ingredients all over to coat. i think my way is way easier and tastes just as good!)

(2) 1/2 pounds pork tenderloins, 1 package with 2 tenderloins
2 tablespoons balsamic vinegar
2 tablespoons EVOO or grapeseed oil
4 cloves garlic, cracked
coarse salt and black pepper
2 sprigs fresh rosemary leaves stripped and finely chopped
2 sprigs fresh thyme, leaves stripped and finely chopped

Preheat oven to 500 degrees F.

Trim silver skin or connective tissue off tenderloins with a very sharp thin knife.

Place tender loins on a nonstick cookie sheet with a rim. Coat tenderloins in a few tablespoons of balsamic vinegar, rubbing vinegar into meat. Drizzle tenderloins with extra-virgin olive oil, just enough to coat. Cut small slits into meat and disperse chunks of cracked garlic cloves into meat. Combine steak seasoning blend or coarse salt and pepper with rosemary and thyme and rub meat with blend. Roast in hot oven 20 minutes.

Let meat rest, transfer to a carving board, slice and serve.
