When I was young, my favorite cookbook of my moms was called Dinner on the Diner. It is the Junior League Cookbook from Chattanooga, TN, the best city in Tennessee I might add. There is a cookie recipe in the cookbook that I made all the time when I was young, and still do to this day. It is so yummy! It is basically a Chocolate Chip Cookie add Butterscotch morsels and Pecans. The best part is what they are called. Elfin Magic Cookies. Wonder where they came up with that? Here's the recipe .... Unfortunately I don't have a healthy spin on these cookies!
2/3 cup butter, softened
2/3 cup shortening
2 eggs
1 cup sugar
1 cup light brown sugar
2 teaspoons vanilla
2 1/2 cups self-rising flour
1 6-oz. package butterscotch morsels
1 6-oz. package semi-sweet chocolate chips
2 cups chopped pecans
Preheat oven to 350. Cream butter and shortening in a large mixing bowl. Add eggs, sugars, and vanilla. Mix well. Blend in flour. Stir in butterscotch morsels, chocolate chips, and nuts.
Drop by tablespoons onto greased cookie sheet. Bake for 13 minutes. Makes 6 dozen cookies. Enjoy!
