here's another yummy soup recipe to warm you up on this chilly, dreary friday.

homemade potato soup
4-5 medium potatoes
1 medium onion
salt
6 pieces of bacon
2 cloves garlic
1 heaping T. flour
2+ cups of milk
1 stick butter
1 1/2 cups shredded cheese
chives (if you want them)
peel, wash and dice potatoes. chop onion.
in large pot cover potatoes and onion with water and add salt to taste.
cover and cook on medium until potatoes are soft, but not mushy.
fry bacon and crumble, set aside.
mince garlic, set aside.
make a paste with the flour and 1/3 cup of the milk, stirring until smooth.
add 1 1/2 - 2 cups milk to paste, stir and then add to pot of potatoes/onion.
add butter, bacon, garlic, cheese and chives (if you have them) to soup.
stir and simmer for 20 minutes.
(we just added the butter, garlic and cheese and it was still so good!)
